Fine Dining In HCEC

SCRIPT

Good afternoon, young ladies and young gentlemen. Welcome to HCEC 5-star restaurant. You are here for a total dining experience. To achieve such, we need your complete attention and cooperation. So, let’s brace ourselves for a memorable afternoon.

Let’s have some general rules first

1. Conversing with your neighbor is as important as eating. You can hardly ignore the person seated next to you or in front of you.

a. Enjoy the presence of the people around you as you enjoy your meal.

b. Conversations should be conducted in a genial manner.

c. Choose pleasant topics.

d. Voices modulated enough but not loud.

e. Never talk when your mouth is full

2. Always maintain your poise throughout the meal. When eating, don’t lower your head as if you’re going to duck it over your plate. Keep your elbows off the table.

3. If you encounter a cover with arrays of cutlery and silverwares and you are not sure of what forks or spoon to use, the rule is to use first the silver farthest from your plate. It is also helpful to follow the lead of the hostess or guest of honor.

4. Be aware of the use of each “ware”.

a. Your cover is composed of the ff: dining plate, three spoons on its right side, two forks and a knife on its left side, a glass tumbler on the upper right part and a stemmed glass beside the tumbler.

b. The knife is only for spreading the butter, cutting meat or fish. You should never use it for conveying food to your mouth.

c. The napkin is used to protect your clothes from the food. It should be put across your lap. Cloth napery is for your mouth. Pat, not wipe.

d. Don’t ever leave your spoon in your cup or in a stemmed glass.

e. If your silver is dirty or it fell on the floor, don’t wipe off. Ask the waiter for a clean replacement.

5. Once in, put it in.

6. Don’t drink while your mouth is full.

7. Never pick your teeth in public—not even by covering your mouth with a napkin. Clean your teeth in the privacy of a bathroom.

DINNER PROPER

  1. Our first course is the NIDO soup, our appetizer.
    1. In sipping your soup, get the spoon farthest from the right of your plate and scoop the soup outwardly or away from you.
    2. Remember: bring the spoon to your lips, not your lips to the spoon.
    3. Sip the soup from the rim of the spoon. Don’t put the entire spoon into your mouth.
    4. Sip, not slurp the soup.
    5. Use the table napkin to gently tap the excess soup moisture from around your mouth.

  1. Next to be served is the bread and butter
    1. First, get/ tear a small portion of the bread. Using the knife, spread some butter on the piece of bread. Return the knife to its original place.
    2. Never use your teeth to tear the bread.
    3. Chew the buttered piece slowly with your mouth closed.

  1. Get the cocktail juice found on the upper portion of your cover. Sip a little of the juice and return it gently on its original place.

  1. We will now proceed to the main course.

    1. You have the following on your plate:

i. Chicken fillet

ii. Pork chop barbecue

iii. Side dish (mixed vegetables)

iv. A cup of rice

    1. You may opt to start with the chicken fillet or the barbecue. Get your knife using your right hand. Then, using a fork as an anchor, slice a small portion of the meat and bring it to your mouth, using the fork.

    1. NEVER USE YOUR KNIFE TO BRING FOOD TO YOUR MOUTH.

    1. CHEW the meat thoroughly before swallowing it.

    1. Using your spoon and fork, get a small portion of your rice and bring it to your mouth. Never put two dishes in the spoon at the same time and eat them together.

    1. Get also a small portion of the side dish using the same spoon and bring it to your mouth.

    1. Repeat the whole process until you are full.

    1. Drink water from time to time to clean your palate and aid your food in going down.

  1. Last to be served is the desert.

    1. Using the teaspoon found nearest to your plate, scoop a small portion and bring it to your mouth. Chew it slowly until you are full.
    2. Drink a glass of water.

WHEN YOU ARE DONE EATING

  1. Put your utensils across your plate shows that you have finished eating.
  2. Never lean back or push your plate or announce: “I’m through “ or “ I’m stuffed”
  3. Always leave the napkin crumpled or unfolded. This is done to show that it is not to be used again.
